may 11th 2008 sunday 9:35 pm crispy red snapper & chinese sausage rice with pickled mango salad and vietnamese tea foam after making those horrible sausages in class wednesday night i packed my knives up and as it was time to leave i grabbed a magazine on the way out. inside was a recipe by executive chef michael bloise from the restaurant wish, which is amazing by the way, that is pickled papaya salad on top of crispy snapper with shrimp / chinese sausage / jasmine rice and vietnamese tea foam. so that is what i made today for my mother. i made minor adjustments by using red snapper instead of yellow tail and mango instead of papaya. she enjoyed it a lot and was happy that i cooked for her.

it's at a club in hollywood called GENRE which is held on mondays. i get too drunk to remember things and that's probably not a good idea right?
ugh, I've always felt like LA was dirty and soulless. basically the embodiment of American Suburbia and Obsession. Consumerism, Celebrity Worship, Excess...it makes me feel sick. and San Fran is nice but it is too Californian. and I am a picky nerdy douche so i will talk about things and then do nothing about them. :) I know I've said this before but you're an amazing chef.
