i made these early in the morning. not a nutritional breakfast, but they were really good. i think traditional cannolis are made with ricotta cheese, but i didn’t have any. i'm not even sure i like ricotta cheese because i have never had it. i made sure to use just one of my 8oz. package of mascarpone since i am saving the other for something tirimisu inspired! espresso, chocolate shavings, etc.
a friend said he will buy wine if i cook something to go along with it. the only wines i have ever had were chardonnay, blackbery, merlot, riesling, and champagne. i don't know much about their food pairing. all i know is that i have enjoyed all of the wines i have tried so far. it should be interesting.
